Ají means chili pepper: the name came from the cherries' pepper aroma; in the cup, it is warm spice, not heat. Despite its Bourbon name, a genetically tested sample was identified as an Ethiopian landrace, not Bourbon. First made known in Huila and now grown in Tolima, this microlot offers a clean, floral, spice-led cup.
